daily activity (engish version) #6

hallo guys...
back to my blog and this is my second day practice about breakfast and i am back to story what my activity in kitchen today... enjoying to read my blog and dont get bored...hopefully you be happy after read my blog....

today i'm practice danish but before i'm and all my classmate prepare to english breakfast before at 9.00am...after all finish i'm continue make danish for american breakfast tomorrow...i'm enjoying to my work because i like work in pastry section and my goal is to become a reliable pastry Aamiin...and today the first time i use to dough sitter...and because the machine my product is good and finishen quickly.

today i'm very enjoying my practice and hopefully my classmate can be the best and can be a good team work i want i and also i want my classmate become more solid, i think its enough to get here i dont stop hoping that your readers wont get bored with i write, you can also give input for the future of my blog so that my blog becomes quality and useful

recipe of danish
ingredients:
400gr milk
11gr yeast
125gr butter
150gr sugar
12gr salt
200gr eggs
50gr egg yolks
800gr hard flour
200gr soft flour
500gr croissant fat

P R O C E D U R E
mixing:
modified starigt dough
1. scald milk. cool to lukewarm. dissolve yeast in milk
2. mix butter, sugar, salt, and spice until smooth, using paddle. beat in eggs and yolks
3. add liquid  (from step 1) and flour mix 3-4 minutes on 2nd speed
4. rest in retarder 20-30minutes
5. roll in remaining butter and give 3 three-folds

proofing:
90ᐤf (32ᐤc) with little steam. egg wash after proofing
baking:
375ᐤf(190ᐤc)
