hello guys...
i tell you about my daily activity today... today is my first time back at kitchen of poltekpar makassar after long holiday, i'm feel very happy today because today is my first time use cook uniform, and like usually i do oneline for absent and check grooming.
today we practice puff pastry and dishes egg, and it materi bring sir ical, and after it we doing to make puff pastry dough from each team and handle of supervisor from senior of semester 4 and we doing until dzuhur come, when dzuhur come senior talk going to praying. after praying i'm back to oneline for listen to describe about egg dishes.
i'm so speechless i dont know what i want to say because this is my first time to make about daily activity. i should to more study to english language because it basic for come to industri world i hope i can training in batam and i wish i'm going to round world from my skill... i'm sorry if my grammar so messy because i'm rarely to attention when english lecturer teach.
recicpe of puff pastry
ingredients:
1kg hard flour
800gr fat
15gr salt
700ml water
P R O C EDURE
Mixing:
1. Place the first quantities of flour and butter in a mixing bowl.
With a paddle attachment, mix at low speed until well blended.
2. Dissolve the salt in the cold water.
3. Add the salted water to the flour and mix at low speed until a
soft dough forms. Do not overmix.
4. Remove the dough from the mixer and let rest in the refrigerator
20 minutes.
5. Cream the last quantities of butter and flour at low speed in the
mixer until the mixture is about the same consistency as the
dough, neither too hard nor too soft.
6. Roll the butter into the dough following the procedure shown in
Figure 34.2. Give the dough 4 four-folds or 5 three-folds.

soft: 4minute
medium: 7minuute
hard: 10minute
